My kids and I are so excited for Groundhog Day this week. I’d never really celebrated before, but this year I wanted to have a family party on whatever day was in the “middle” of winter. My husband looked up the Winter Solstice, which was December 21, and the Spring Equinox, which will be March 20. When we counted to the middle, and it was February 3rd. That’s when I realized – oh – Groundhog Day is on February 2nd because that’s roughly the middle of winter….got it. I don’t know why I didn’t know that before but I didn’t. Anyhow, each of them will get to open a Christmas present I stole from under our tree and saved for the occasion. We’re going to make baked potatoes look like groundhogs with the help of cheese sticks and black beans. I got the idea from this adorable post. Can you tell it helps me to have something to look forward to through winter? Yup it totally does.
